Taos Blue Corn Polenta Mix

Made with Heirloom Taos Blue Corn, this polenta mix results in a beautiful lilac coloured polenta.

Ingredients: Taos Blue corn, wild garlic flower, mokum carrot, rosemary, salt, pepper

Instructions: Soak 1/2 the bag (125g) overnight in 800ml water. Add to a pot with 2 tablespoons olive oil and 1 tablespoon butter (optional). Cook over low heat, stirring gently, for about 15 minutes. Finish with grated hard cheese (optional).

Store in a cool dry place. BB June 2025
